For the Soup:
- 1 tablespoon sesame oil
- 1 pound ground pork (or ground chicken or turkey)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 4 cups chicken broth
- 1/4 cup low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 medium carrot, julienned or shredded
- 4 cups shredded green cabbage
- 1 cup shredded purple cabbage (optional)
- 2 green onions, sliced
- toasted sesame seeds for garnish (optional)
Instructions
- In a large soup pot, heat sesame oil over medium heat. Add ground pork and cook until browned and cooked through.
- Add onion, garlic, and ginger and sauté until fragrant. Season with black pepper and red pepper flakes if using.
- Stir in chicken broth, soy sauce, and rice vinegar. Bring to a simmer, then add carrots and cabbage.
- Simmer uncovered until vegetables are tender but not mushy. Stir in green onions and remove from heat.
- Serve hot, garnished with extra green onions and toasted sesame seeds if desired.

- For a low-carb version, skip any noodles or rice.
- Add cooked rice or crispy wonton strips for a heartier bowl.
