Egg White Bites:
- 1 cup liquid egg whites (or whites from about 6 large eggs)
- 1/4 cup cottage cheese
- 1/4 cup shredded mozzarella or Monterey Jack cheese
- 1/4 cup diced red bell pepper
- 1/4 cup chopped spinach
- 2 tablespoons finely chopped onion
- Salt and pepper to taste
- Olive oil spray for greasing
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 12-cup mini muffin tin with olive oil spray.
- Prepare the mixture: In a blender or mixing bowl, combine the egg whites, cottage cheese, shredded cheese, salt, and pepper until smooth. Stir in the diced red bell pepper, spinach, and onion.
- Fill the muffin tin: Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake: Bake for 18–22 minutes, or until the bites are set and slightly golden on top.
- Cool and serve: Let cool for a few minutes before removing from the tin. Serve warm or store in the fridge for up to 4 days.
