Salmon Fillets:

  • 4 salmon fillets (6 oz each, skinless)
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning

Seafood Stuffing:

  • ½ pound lump crab meat (picked over for shells)
  • ½ cup cooked shrimp (chopped)
  • ¼ cup cream cheese (softened)
  • 2 tablespoons mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 1 green onion (thinly sliced)
  • 1 teaspoon lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C).
  2. Prepare the Salmon: Pat salmon fillets dry and make a slit down the center of each fillet to create a pocket. Rub with olive oil and season with Cajun seasoning.
