Additional Ingredients:

  • 1 cup grated carrots
  • 1 apple, peeled and grated
  • 1/2 cup raisins or dried cranberries
  • 1/4 cup unsweetened shredded coconut

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and lightly grease an 8-inch square baking dish.
  2. Mix Dry Ingredients: In a large bowl, combine rolled oats, walnuts, cinnamon, ginger, and salt.
  3. Prepare Wet Mixture: In another bowl, whisk together milk, maple syrup, eggs, and vanilla extract.
  4. Combine Ingredients: Add carrots, apple, raisins, and coconut to the oat mixture. Pour the milk mixture over the oats and mix well.
