- 1/4 cup maple syrup or honey
- 2 large eggs

- 1 cup grated carrots
- 1 apple, peeled and grated
- 1/2 cup raisins or dried cranberries
- 1/4 cup unsweetened shredded coconut
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and lightly grease an 8-inch square baking dish.
- Mix Dry Ingredients: In a large bowl, combine rolled oats, walnuts, cinnamon, ginger, and salt.
- Prepare Wet Mixture: In another bowl, whisk together milk, maple syrup, eggs, and vanilla extract.
- Combine Ingredients: Add carrots, apple, raisins, and coconut to the oat mixture. Pour the milk mixture over the oats and mix well.
- Bake: Spread the mixture in the baking dish and bake for 35-40 minutes until set and golden.
