Description

These Enchilada Cups are a delightful twist on traditional enchiladas, with all the flavors packed into individual portions. Easy to make and perfect for parties or a fun dinner!

Tortilla Cups:

  • 12 small flour or corn tortillas
  • Nonstick cooking spray

Filling:

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/4 cup sliced green onions
  • 1/4 cup chopped fresh cilantro

Cheese Blend:

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat oven: Preheat to 375°F (190°C) and spray a 12-cup muffin tin with nonstick spray.
  2. Prepare tortilla cups: Warm tortillas, press into muffin cups.
  3. Make filling: Mix chicken with enchilada sauce, add beans and corn. Spoon into tortilla cups.
  4. Add cheese: Top with cheddar and Monterey Jack.
  5. Bake: Bake for 15-18 minutes until cheese is melted and bubbly.
