Suiza Sauce

  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup chopped roasted green chiles (or canned)
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) to prepare for baking the enchiladas.
  2. Prepare filling: In a skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3 to 4 minutes. Stir in minced garlic, ground cumin, salt, black pepper, and the shredded chicken. Cook this mixture for an additional 2 to 3 minutes to meld the flavors, then set aside.
  3. Make Suiza sauce: In a separate saucepan, melt butter over medium heat. Whisk in the flour to create a roux and cook for 1 minute without browning. Gradually whisk in the chicken broth until the mixture is smooth and starts to thicken, about 2 to 3 minutes. Reduce the heat to low and stir in sour cream, chopped roasted green chiles, fresh cilantro, and salt. Allow the sauce to simmer gently for 2 minutes before removing from heat.
  4. Warm tortillas: Heat the corn tortillas either in the microwave wrapped in a damp paper towel or briefly on a dry skillet until they are warm and pliable for rolling.
  5. Assemble enchiladas: Spoon the chicken filling evenly onto each tortilla, roll them up tightly, and place seam-side down in a greased 9×13-inch baking dish to prevent them from unrolling during baking.
