Description

These Fiery Cajun Shrimp Stuffed Jalapeños are the perfect blend of spicy, creamy, and savory flavors. Packed with shrimp, cream cheese, and Cajun seasoning, these stuffed jalapeños are a crowd-pleasing appetizer that will disappear fast at any gathering.

Jalapeños:

  • 12 large jalapeño peppers, halved lengthwise and seeded

Shrimp Mixture:

  • 1 tablespoon olive oil
  • 1/2 pound shrimp, peeled, deveined, and finely chopped
  • 1 teaspoon Cajun seasoning
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, finely chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/4 cup panko breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Sauté shrimp: In a skillet over medium heat, heat olive oil and sauté the chopped shrimp with Cajun seasoning for 2–3 minutes until pink and just cooked. Remove from heat and let cool slightly.
  3. Mix filling: In a mixing bowl, combine the cream cheese, cheddar cheese, green onions, garlic, and cooked shrimp. Season with salt and pepper to taste.
  4. Stuff jalapeños: Spoon the shrimp mixture evenly into the jalapeño halves and place them on the prepared baking sheet. Sprinkle with panko breadcrumbs if desired.
  5. Bake: Bake for 15–18 minutes until the peppers are tender and the filling is golden and bubbly. Serve warm.

Notes

  • Wear gloves when handling jalapeños to avoid irritation.
  • For extra heat, leave a few seeds in or use pepper jack cheese in the filling.
  • These can also be grilled instead of baked for a smoky flavor.
