Jalapeños:
- 12 large jalapeño peppers, halved lengthwise and seeded
Shrimp Mixture:
- 1 tablespoon olive oil
- 1/2 pound shrimp, peeled, deveined, and finely chopped
- 1 teaspoon Cajun seasoning
- 4 ounces cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, finely chopped
- 1 clove garlic, minced
- Salt and pepper to taste
- 1/4 cup panko breadcrumbs (optional for topping)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Sauté shrimp: In a skillet over medium heat, heat olive oil and sauté the chopped shrimp with Cajun seasoning for 2–3 minutes until pink and just cooked. Remove from heat and let cool slightly.
- Mix filling: In a mixing bowl, combine the cream cheese, cheddar cheese, green onions, garlic, and cooked shrimp. Season with salt and pepper to taste.
- Stuff jalapeños: Spoon the shrimp mixture evenly into the jalapeño halves and place them on the prepared baking sheet. Sprinkle with panko breadcrumbs if desired.
- Bake: Bake for 15–18 minutes until the peppers are tender and the filling is golden and bubbly. Serve warm.
Notes
- Wear gloves when handling jalapeños to avoid irritation.
- For extra heat, leave a few seeds in or use pepper jack cheese in the filling.
- These can also be grilled instead of baked for a smoky flavor.
