For the Meringue:

  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • Powdered sugar for dusting

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and prepare an 8-inch springform pan with parchment paper.
  2. Melt Chocolate and Butter: Melt the chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth.
  3. Combine Ingredients: Remove from heat and whisk in 3/4 cup sugar, egg yolks, vanilla extract, and salt until well combined.
  4. Prepare Meringue: In a separate bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add 1/2 cup sugar and beat until stiff peaks form.
  5. Fold Meringue into Batter: Fold one-third of the meringue into the chocolate mixture, then gently fold in the rest.
  6. Bake: Pour the batter into the pan and bake for 25-30 minutes until set. Let cool in the pan.
  7. Finish: Dust with powdered sugar before serving.
