Description

This Four Bean Spicy Crockpot Chili is a hearty and flavorful dish perfect for chilly days. Packed with four types of beans and a variety of spices, this chili is a satisfying meal that can be easily customized to suit your preferences.

Meat Option:

  • 1 pound ground beef or turkey

Vegetarian Option:

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can cannellini beans, drained and rinsed
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can diced tomatoes
  • 1 (4 oz) can diced green chilies
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 cup vegetable or beef broth
  • Chopped fresh cilantro and shredded cheese for garnish (optional)

Instructions

  1. If using meat: In a large skillet over medium heat, cook the ground beef or turkey until browned, breaking it up with a spoon. Drain excess fat if needed. Transfer the cooked meat to the crockpot.
  2. Add the diced onion, minced garlic, all four types of drained and rinsed beans, crushed tomatoes, diced tomatoes, diced green chilies, tomato paste, chili powder, smoked paprika, ground cumin, cayenne pepper if using, salt, black pepper, and broth. Stir well to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, stirring occasionally.
  4. Taste and adjust seasoning if needed. Ladle into bowls and garnish with chopped fresh cilantro and shredded cheese if desired.

Notes

  • Make it fully vegetarian by omitting the meat.
  • Add more cayenne or jalapeños for extra heat.
  • Leftovers freeze well for up to 3 months.
