Caramelized Onions:

  • 4 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Soup Base:

  • 6 cups beef broth
  • 1 cup dry red wine
  • 1 bay leaf
  • 1 tablespoon Worcestershire sauce

For Serving:

  • 1 baguette, sliced
  • 2 cups shredded Gruyère cheese

Instructions

  1. Prepare Short Ribs: Season short ribs with salt and pepper. Sear in olive oil until browned. Set aside.
  2. Caramelize Onions: Cook onions until deeply caramelized. Add garlic, balsamic vinegar, and thyme.
  3. Simmer: Deglaze with red wine, add beef broth, bay leaf, and Worcestershire sauce. Simmer with short ribs until tender.
  4. Finish Soup: Shred beef, adjust seasoning. Ladle into bowls, top with baguette and Gruyère.
  5. Broil: Broil until cheese is melted and bubbly. Serve hot.
