Description

A creamy, cheesy casserole combining fresh broccoli with savory French onion flavors, topped with crispy fried onions for a delightful crunch. Perfect as a comforting side dish or a light main meal, this casserole bakes quickly in under 35 minutes for an easy family-friendly recipe.

Ingredients

Scale

Vegetables

  • 1 lb broccoli florets, chopped

Wet Ingredients

  • 1 (10.5-oz) can unsalted cream of mushroom soup
  • 1 cup refrigerated sour cream based French onion dip

Cheese and Toppings

  • 1½ cups shredded cheddar cheese
  • 1 (6-oz) container French fried onions

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF and lightly spray a 9×9-inch baking dish with cooking spray to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the chopped broccoli, cream of mushroom soup, French onion dip, 1 cup of shredded cheddar cheese, and half of the container of French fried onions. Stir until everything is evenly mixed.
  3. Spread in Pan: Transfer the broccoli mixture into the prepared baking dish, spreading it out evenly to ensure it cooks uniformly.
  4. First Bake: Bake the casserole in the preheated oven for 25 minutes, allowing the flavors to meld and the mixture to heat through.
  5. Add Toppings and Final Bake: Remove the dish from the oven, sprinkle the remaining ½ cup of shredded cheddar cheese and the rest of the French fried onions over the top, then return it to the oven to bake an additional 5 minutes until the cheese melts and the onions turn crispy and golden.

Notes

  • Use fresh or frozen broccoli florets; if frozen, thaw and drain excess water before mixing.
  • For extra flavor, add a pinch of black pepper or garlic powder to the mixture before baking.
  • To make it vegetarian, ensure the cream of mushroom soup is vegetarian-friendly or use a homemade version.
  • French fried onions add a crispy topping; avoid mixing them all in to keep part of the crunch fresh on top.
  • Let the casserole cool for a few minutes before serving to allow it to set slightly.
