Ingredients

Scale

Potato Salad:

  • 2 pounds baby gold or red potatoes (halved)
  • 1 tablespoon salt (for boiling water)

Dressing:

  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 packet (1 oz) French onion soup or dip mix
  • 1/4 teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • 1/2 cup thinly sliced green onions
  • 1/4 cup finely chopped chives (optional)
  • crispy fried onions (for topping, optional)

Instructions

  1. Boil Potatoes: Place halved potatoes in a pot, cover with water and salt, boil until fork-tender.
  2. Make Dressing: Whisk together sour cream, mayonnaise, French onion dip mix, pepper, and vinegar.
  3. Combine: Toss cooked potatoes in dressing, add green onions and chives. Refrigerate for 1 hour.
