Description

This French Onion Meatloaf combines the classic flavors of caramelized onions and gooey cheese with a hearty ground beef base, creating a delicious and comforting twist on a traditional meatloaf.

Main Meatloaf:

  • 1 tablespoon olive oil
  • 2 large yellow onions thinly sliced
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • 1 tablespoon Worcestershire sauce
  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/4 cup milk
  • 1/2 cup shredded Gruyère or Swiss cheese
  • 1/4 teaspoon black pepper

Topping:

  • 1/2 cup shredded Gruyère or Swiss cheese
  • additional caramelized onions (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Caramelize onions: In a large skillet, heat olive oil and butter, then cook the sliced onions with salt until deeply caramelized. Stir in thyme and Worcestershire sauce, then let cool slightly.
  3. Mix meatloaf: In a mixing bowl, combine ground beef, breadcrumbs, eggs, milk, black pepper, and cooled caramelized onions. Add shredded cheese and mix gently.
  4. Bake: Shape meatloaf mixture, bake for 40–45 minutes. Top with onions and cheese, then bake for another 10–15 minutes until cooked through.
  5. Rest and serve: Let the meatloaf rest for 10 minutes before slicing and serving.
