Description

This French Onion Meatloaf recipe combines the rich, savory flavors of caramelized onions and French onion soup mix with a moist, cheesy ground beef loaf. Topped with melted Gruyère cheese and fresh parsley, this dish offers a comforting twist on a classic meatloaf perfect for a hearty family dinner.

Ingredients

Scale

Meatloaf

  • 1 lb ground beef (preferably a mix of lean and fatty)
  • 2 medium onions, sliced
  • ½ cup beef broth
  • 1 cup breadcrumbs (plain or Italian)
  • 1 large egg
  • 1 packet French onion soup mix
  • 1 cup shredded Gruyère or Swiss cheese
  • 2 tablespoons butter

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the meatloaf.
  2. Caramelize Onions: In a skillet over medium heat, melt 2 tablespoons of butter. Add the sliced onions and sauté, stirring occasionally, until golden brown and caramelized, about 15-20 minutes. Reserve a portion of the caramelized onions for topping later.
  3. Mix Meatloaf: In a large bowl, combine ground beef, the majority of caramelized onions (reserving some for topping), breadcrumbs, beef broth, egg, and the French onion soup mix. Mix gently with your hands or a spoon until just combined to keep the meatloaf tender.
  4. Shape Loaf: Form the mixture into a loaf shape and place it into a greased loaf pan or on a parchment-lined baking sheet.
  5. Add Cheese and Toppings: Create a small well in the center of the meatloaf and sprinkle half of the shredded Gruyère cheese inside. Cover the loaf with the remaining cheese and then top with the reserved caramelized onions to add extra flavor and texture.
  6. Bake: Bake the meatloaf in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C) to ensure it’s safely cooked through.
  7. Rest and Serve: Remove the meatloaf from the oven and let it rest for 10 minutes to allow juices to redistribute. Garnish with fresh chopped parsley before slicing and serving warm.

Notes

  • For best flavor, use a blend of lean and fatty ground beef.
  • Caramelizing onions slowly is key to developing their sweet, rich flavor.
  • You can substitute Gruyère with Swiss cheese if preferred.
  • Letting the meatloaf rest after baking helps keep it moist.
  • Use a meat thermometer to accurately check doneness.
