Caramelized Onions:

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 large yellow onion (thinly sliced)

Seasonings:

  • 1 packet (1 oz) dry French onion soup mix
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper

Topping:

  • 1 cup shredded Gruyère or Swiss cheese
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. Caramelize Onions: In a large skillet over medium heat, melt the butter with the olive oil. Add the sliced onion and cook until caramelized and golden brown.
  3. Prepare Potatoes: In a large bowl, toss the potatoes with the soup mix, garlic powder, thyme, pepper, and caramelized onions. Transfer to the baking dish.
  4. Bake: Cover with foil and bake for 30 minutes. Uncover, add cheese, and bake uncovered for another 15–20 minutes until potatoes are tender and cheese is melted.
