Caramelized Onions:

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 large yellow onions (thinly sliced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 1/2 teaspoon sugar
  • 1 tablespoon balsamic vinegar
  • 1/4 cup dry white wine (optional)

Mac & Cheese:

  • 12 ounces elbow macaroni or small pasta shells
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup beef broth
  • 2 cups shredded Gruyère cheese
  • 1 cup shredded sharp white cheddar
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley or thyme for garnish (optional)

Instructions

  1. Caramelized Onions: In a large skillet, melt butter with olive oil over medium heat. Add onions, salt, pepper, thyme, and sugar. Cook for 25–30 minutes until caramelized. Stir in balsamic vinegar and wine. Set aside.
  2. Mac & Cheese: Cook pasta according to package instructions. In a pot, melt butter, whisk in flour, then gradually add milk and broth. Stir in caramelized onions and cheeses until creamy. Fold in pasta and adjust seasoning.
  3. Serve hot, garnished with extra cheese or herbs if desired.

Notes

  • For a baked version, transfer mac and cheese to a baking dish, top with additional cheese or breadcrumbs, and broil until golden and bubbly.
  • You can substitute vegetable broth to make it vegetarian.
