Indulge in the delightful combination of fresh blueberries and juicy peaches in this moist and flavorful cake. Perfect for summer gatherings or a sweet treat any time of the year.

Ingredients

Scale

Dry Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients:

  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract

Fruits:

  • 1 cup fresh blueberries
  • 2 medium ripe peaches, peeled and diced
  • 1 tablespoon all-purpose flour (for tossing fruit)
  • 2 tablespoons coarse sugar for topping (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round or square cake pan.
  2. Mix dry ingredients: In a medium bowl, whisk together 1 ½ cups flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar: In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add wet ingredients: Beat in the eggs one at a time, then add sour cream and vanilla extract; mix until smooth.
  5. Combine dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Prepare fruits: In a small bowl, toss blueberries and diced peaches with 1 tablespoon flour.
  7. Combine fruit and batter: Gently fold the fruit into the batter; pour into the prepared pan and spread evenly.
  8. Bake: Sprinkle coarse sugar on top if desired. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool and serve: Let the cake cool in the pan for 15 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
