- 1 1/4 cups all-purpose flour
- 1/3 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1–2 tablespoons cold water
For the Filling:
- 8 oz mascarpone cheese
- 1/2 cup heavy whipping cream
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
For the Topping:
- 2–3 cups fresh fruit (such as strawberries, kiwi, blueberries, raspberries, and mandarin oranges)
- 1/4 cup apricot jam (for glaze)
- 1 tablespoon water
Instructions
- Prepare the Crust: Preheat the oven to 375°F (190°C). In a food processor, pulse together the flour, powdered sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs. Add cold water as needed, then press the dough into a tart pan and chill.
- Bake the Crust: Bake for 15–18 minutes until golden. Cool before filling.
- Make the Filling: Beat mascarpone, cream, sugar, and vanilla until fluffy. Spread into the crust.
- Add Fruit Topping: Arrange fresh fruit on top. Heat jam and water, brush over the fruit. Chill before serving.
