  • 3/4 cup granulated sugar (divided)
  • 1/4 cup brown sugar

  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch

For the Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter (cut into cubes)
  • 1/4 cup boiling water

Optional:

  • Coarse sugar for topping
  • Vanilla ice cream for serving

Instructions

  1. Preheat oven to 375°F. Lightly grease a 9×9-inch or similar-sized baking dish.
  2. Filling: In a large mixing bowl, toss sliced peaches with 1/2 cup granulated sugar, brown sugar, cinnamon, lemon juice, vanilla, and cornstarch. Pour into the prepared baking dish.
  3. Topping: In a separate bowl, whisk together flour, remaining 1/4 cup granulated sugar, brown sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in boiling water until a thick dough forms.
  4. Assembly: Drop spoonfuls of the dough over the peaches, leaving gaps. Sprinkle with coarse sugar if desired.
  5. Bake: Bake for 35–40 minutes until golden and bubbly. Cool slightly before serving. Enjoy warm with a scoop of ice cream.
