Cookies:

  • 1 cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups semisweet chocolate chips

Buttercream Filling:

  • ½ cup unsalted butter (for filling, softened)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream or milk

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix cookie dough: In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then mix in vanilla. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients. Stir in chocolate chips.
  3. Bake cookies: Drop dough by rounded tablespoons onto prepared baking sheets, spacing 2 inches apart. Bake for 9–11 minutes or until golden brown on the edges. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  4. Make filling: For the filling, beat together softened butter, powdered sugar, vanilla, and cream until light and fluffy.
  5. Assemble: Once cookies are cooled, spread or pipe the filling onto the flat side of one cookie and sandwich with another to make a double doozie.
