Cool off with this Frozen Mint Lemonade, a delightful blend of fresh lemon juice, mint, and a hint of sweetness. This refreshing beverage is perfect for hot summer days or anytime you need a revitalizing drink.

Frozen Mint Lemonade:

  • 1 cup freshly squeezed lemon juice (about 4–6 lemons)
  • 1/2 cup fresh mint leaves (packed)
  • 1/2 cup granulated sugar (or to taste)
  • 2 cups cold water
  • 3 cups ice cubes
  • lemon slices and mint sprigs for garnish (optional)

Instructions

  1. In a blender, combine the lemon juice, mint leaves, sugar, and cold water. Blend for 15–20 seconds until the mint is finely chopped and the sugar is mostly dissolved.
  2. Add the ice and blend again until smooth and slushy.
  3. Taste and adjust sweetness if needed.
  4. Pour into glasses and garnish with lemon slices and mint sprigs if desired.
  5. Serve immediately while icy and refreshing.

Notes

  • For a lower-sugar version, use honey or maple syrup instead of sugar.
  • You can also make this ahead by blending all ingredients except the ice and freezing in ice cube trays—just re-blend with a little water when ready to serve.
