For the Cookie Layer:
- 1½ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup Fruity Pebbles cereal (plus extra for topping)
For the Cheesecake Layer:
- 8 ounces cream cheese, softened
- ¼ cup granulated sugar
- 1 large egg
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving an overhang for easy removal.
- In a medium bowl, whisk together flour, baking soda, and salt. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the dry ingredients, mixing until just combined. Fold in the Fruity Pebbles cereal.
- Press two-thirds of the cookie dough into the bottom of the prepared pan to form an even layer.
- In a separate bowl, beat the softened cream cheese with sugar, egg, and vanilla until smooth. Pour the cheesecake mixture over the cookie dough base and spread evenly. Crumble the remaining cookie dough on top and gently press it down. Sprinkle extra Fruity Pebbles over the top.
- Bake for 30–35 minutes, or until the top is lightly golden and the center is set. Cool completely, then refrigerate for at least 2 hours before slicing into bars.
Notes
- For clean slices, chill well before cutting.
- These bars are best stored in the fridge and can be frozen for up to a month.
- For an extra pop of flavor, add a pinch of lemon zest to the cheesecake layer.
