Brownie Batter:

  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1/3 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Additional:

  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F (175°C). Grease a 24-cup mini muffin pan or line with mini paper liners.
  2. Melt butter and prepare batter: In a saucepan, melt butter over low heat. Remove from heat and whisk in sugars. Cool slightly, then whisk in eggs and vanilla extract.
  3. Combine dry ingredients: In a separate bowl, whisk flour, cocoa powder, salt, and baking powder. Add to wet mixture and stir until combined. Fold in mini chocolate chips.
  4. Bake: Spoon batter into muffin cups. Bake for 10–12 minutes until set. Cool on a wire rack.

Notes

  • For a fudgy center, slightly underbake and allow to set while cooling.
  • You can add nuts or a chocolate drizzle on top once cooled.
