These Funfetti Birthday Cake Blondies are a delightful twist on traditional blondies, bursting with colorful sprinkles and white chocolate chips. Easy to make and perfect for any celebration!
Ingredients
Scale
Blondies:
- 1/2 cup unsalted butter (melted)
- 1 cup light brown sugar (packed)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup rainbow sprinkles
- 1/3 cup white chocolate chips
Instructions
- Preheat the oven: Preheat the oven to 350°F (177°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
- Mix wet ingredients: In a medium bowl, whisk together melted butter and brown sugar until smooth. Add egg, vanilla, and almond extract (if using), and whisk until combined.
- Add dry ingredients: Stir in flour, baking powder, and salt until just mixed—do not overmix.
- Fold in extras: Gently fold in rainbow sprinkles and white chocolate chips.
- Bake: Spread the batter evenly in the prepared pan. Bake for 22–26 minutes until edges are set and a toothpick comes out mostly clean.
- Cool and serve: Cool completely in the pan before slicing into squares.
Notes
- Use jimmies-style sprinkles to prevent bleeding into the batter.
- For extra gooey blondies, remove from the oven closer to the 22-minute mark.
- You can double the recipe for a 9×13-inch pan—just adjust the bake time slightly.
