Instructions
- Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, and salt.

Using a small cookie scoop or spoon, carefully drop tablespoon-sized portions of batter into the hot oil, frying in batches. Cook for 1–2 minutes per side or until golden brown and puffed.

Wet Ingredients: In a separate bowl, beat the egg with the milk and vanilla extract. Pour the wet ingredients into the dry and mix until smooth and lump-free.
