Instructions
- Prepare the Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, beat the eggs, then add milk and vanilla extract. Gradually pour the wet ingredients into the dry ingredients, whisking until a smooth batter forms.
- Fry the Bites: Heat about 2 inches of vegetable oil in a deep skillet or pot over medium heat to 350°F (175°C). Using a spoon or small cookie scoop, carefully drop small amounts of batter into the hot oil. Fry in batches, turning as needed, until golden brown and puffed, about 2–3 minutes per side.
- Finish and Serve: Remove with a slotted spoon and drain on paper towels. While still warm, dust generously with powdered sugar. Serve immediately.
