Ingredients
Fish:
2 tablespoons olive oil
4 barramundi fillets (about 6 oz each)
Salt and black pepper to taste
Sauce:
2 tablespoons unsalted butter
4 garlic cloves, minced
1 pint cherry tomatoes, halved
½ teaspoon crushed red pepper flakes (optional)
½ cup dry white wine or chicken broth
¼ cup fresh basil leaves, chopped
Lemon wedges for serving
Instructions
- Prepare the Fish: Pat the barramundi fillets dry and season with salt and pepper. Sear in olive oil until golden and cooked through.
- Make the Sauce: In the same skillet, melt butter, sauté garlic, add tomatoes, red pepper flakes, and wine. Simmer and return fish to the skillet.
- Finish and Serve: Spoon sauce over fish, cook briefly, sprinkle with basil, and serve with lemon wedges.
