For the beef:
- 1 lb ground beef
- 2 tablespoons unsalted butter
- 3 cloves garlic (minced)
- 1/2 cup honey BBQ sauce
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
For serving:
- 8 small flour or corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced red onion
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
- Stir in the honey BBQ sauce, honey, smoked paprika, chili powder, salt, and pepper. Simmer for 5–7 minutes until the beef is well coated and slightly caramelized.
- Warm the tortillas in a skillet or microwave. Fill each tortilla with a scoop of the beef mixture, then top with shredded lettuce, diced red onion, cheddar cheese, and chopped cilantro.
- Serve with lime wedges on the side.
Notes
- For extra flavor, toast the tortillas lightly in a skillet.
- This recipe also works well with shredded beef or chicken.
- Add sliced jalapeños or avocado for extra heat and creaminess.
