Ingredients

Baby Gold Potatoes:

1 1/2 pounds

Olive Oil:

2 tablespoons

Salt and Black Pepper:

to taste

Sirloin Steak:

1 1/4 pounds, cut into bite-sized pieces

Unsalted Butter:

3 tablespoons

Garlic Cloves:

5, minced

Fresh Thyme Leaves:

1 teaspoon

Chopped Fresh Rosemary:

1 teaspoon

Fresh Parsley:

chopped, for garnish


Instructions

  1. Preheat the oven: Preheat the oven to 425°F.
  2. Place the baby potatoes on a large baking sheet and drizzle with olive oil. Season with salt and pepper, then roast for 25–30 minutes, or until fork-tender.

  3. Smash the potatoes: Remove the baking sheet from the oven and use the bottom of a glass or measuring cup to gently smash each potato. Return the smashed potatoes to the oven and roast for an additional 10–15 minutes, or until crispy and golden.
  4. Cook the steak: Heat a large skillet over medium-high heat. Season the steak bites with salt and pepper. Add olive oil to the skillet, then sear the steak in batches for 2–3 minutes per side until browned and cooked to your liking. Remove steak from the skillet and set aside.
  5. Prepare the garlic butter: In the same skillet, reduce heat to medium and add butter. Stir in the garlic, thyme, and rosemary, and sauté for 30–60 seconds until fragrant. Return the steak bites to the skillet and toss to coat in the garlic butter.
  6. Serve: Serve the steak bites warm with the crispy smashed potatoes. Garnish with chopped parsley.

Notes

  • For extra crispiness, broil the smashed potatoes for the last 2–3 minutes.
  • You can also use ribeye or strip steak instead of sirloin.
  • Add a squeeze of lemon juice to the garlic butter for a bright finish.
