For the creamy pepper jack penne:
- 8 ounces penne pasta
- 1 tablespoon olive oil
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup shredded pepper jack cheese
- ½ cup grated Parmesan cheese
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Cook penne pasta: Cook penne pasta according to package instructions until al dente; drain and set aside.
- Prepare creamy pepper jack penne: In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until softened, about 3–4 minutes. Reduce heat to low and stir in heavy cream, pepper jack cheese, Parmesan, smoked paprika, salt, and pepper. Add cooked pasta and toss to coat. Keep warm.
- Cook steak bites: In a separate skillet, melt butter over medium-high heat. Add garlic and thyme, cooking until fragrant, about 1 minute. Add steak bites, seasoning with salt and pepper. Sear steak pieces until browned and cooked to desired doneness, about 4–6 minutes. Remove from heat.
- Serve: Serve steak bites over creamy pepper jack penne. Garnish with chopped parsley.

- For extra kick, add red pepper flakes to the cream sauce.
