  • 1 red bell pepper, thinly sliced

Sauce Ingredients

  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/4 teaspoon ground black pepper

Instructions

  1. Cook Noodles: Cook the lo mein noodles according to package instructions. Drain and rinse with cold water to stop the cooking process, then set aside.
  2. Prepare Chicken: In a medium bowl, toss the thinly sliced chicken with 1 tablespoon soy sauce and cornstarch until evenly coated. This helps tenderize the chicken and gives a nice glaze once cooked.
  3. Cook Chicken: Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry for 4–5 minutes until browned and fully cooked. Remove the chicken from the pan and set aside.
  4. Cook Vegetables and Garlic: In the same pan, add the remaining 1 tablespoon of vegetable oil and the minced garlic. Sauté for about 30 seconds until fragrant. Add the red bell pepper, shredded carrots, snow peas, and green onions. Stir-fry for 3–4 minutes until the vegetables are crisp-tender.
  5. Prepare Sauce: In a small bowl, whisk together the low-sodium soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and black pepper until well combined.
  6. Combine Ingredients: Return the cooked chicken to the pan with the vegetables. Pour the sauce over and toss everything together to coat evenly.
  7. Add Noodles: Add the cooked noodles to the pan and stir well to combine evenly with the chicken, vegetables, and sauce. Heat through for 1–2 minutes.
