Chicken:

  • 4 boneless, skinless chicken breasts

Marinade:

  • 3 tablespoons olive oil
  • 3 cloves garlic (minced)
  • juice and zest of 2 limes
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Garnish:

  • chopped fresh cilantro for garnish (optional)

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together olive oil, minced garlic, lime juice, lime zest, cumin, paprika, chili powder, salt, and black pepper.
  2. Marinate the Chicken: Place chicken breasts in a resealable bag or shallow dish and pour the marinade over the top. Seal and refrigerate for at least 30 minutes or up to 2 hours.
  3. Cook the Chicken: Preheat a skillet or grill over medium heat. Remove chicken from the marinade and cook for 6–7 minutes per side, or until the internal temperature reaches 165°F and the chicken is nicely browned.
  4. Rest and Serve: Let the chicken rest for 5 minutes before slicing. Garnish with fresh cilantro if desired.

  • You can also cook it in the oven at 400°F for 20–25 minutes if preferred.
