Chicken:
- 4 boneless, skinless chicken breasts
Marinade:
- 3 tablespoons olive oil
- 3 cloves garlic (minced)
- juice and zest of 2 limes
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon chili powder
- 1 teaspoon salt
- ½ teaspoon black pepper
Garnish:
- chopped fresh cilantro for garnish (optional)
Instructions
- Prepare the Marinade: In a small bowl, whisk together olive oil, minced garlic, lime juice, lime zest, cumin, paprika, chili powder, salt, and black pepper.
- Marinate the Chicken: Place chicken breasts in a resealable bag or shallow dish and pour the marinade over the top. Seal and refrigerate for at least 30 minutes or up to 2 hours.
- Cook the Chicken: Preheat a skillet or grill over medium heat. Remove chicken from the marinade and cook for 6–7 minutes per side, or until the internal temperature reaches 165°F and the chicken is nicely browned.
- Rest and Serve: Let the chicken rest for 5 minutes before slicing. Garnish with fresh cilantro if desired.
