For the Potatoes:
- 1 1/2 pounds baby potatoes, halved
- 1 1/2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
For the Chicken:
- 4 boneless, skinless chicken thighs or breasts
- 1 1/2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
For Garnish:
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the Oven: Preheat the oven to 400°F (200°C).
- Prepare Potatoes: Toss halved baby potatoes with olive oil, garlic, salt, pepper, and Parmesan. Spread on one side of a baking sheet.
- Prepare Chicken: Toss chicken with olive oil, garlic, Italian seasoning, paprika, salt, pepper, and Parmesan. Place on the other side of the baking sheet.
- Bake: Bake for 30–35 minutes, flipping potatoes and chicken halfway, until cooked through.
- Garnish and Serve: Garnish with parsley and extra Parmesan. Serve hot.
Notes
- Add broccoli or green beans for a complete meal.
- Bone-in chicken thighs can be used with increased cook time.
