Chicken:
- 1 ½ pounds boneless, skinless chicken thighs or breasts, cut into chunks
Potatoes:
- 1 ½ pounds baby potatoes, halved or quartered
Seasoning:
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
Toppings:
- ½ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Optional: red pepper flakes for heat
Instructions
- Preheat Oven: Preheat oven to 400°F (200°C).
- Prepare Chicken and Potatoes: In a large bowl, combine chicken, potatoes, olive oil, garlic, salt, pepper, and Italian seasoning. Toss to coat.
- Bake: Spread mixture on a baking sheet. Sprinkle half of Parmesan cheese on top. Bake for 30–35 minutes, stirring halfway through.
- Final Touches: Sprinkle remaining Parmesan in the last 5 minutes. Garnish with parsley and red pepper flakes before serving.
Notes
- Bone-in chicken thighs can be used for more flavor; adjust bake time accordingly.
- Yukon gold or red potatoes are recommended.
- Add broccoli or green beans during the last 15 minutes of baking for a complete meal.
