Chicken:

  • 1 ½ pounds boneless, skinless chicken thighs or breasts, cut into chunks

Potatoes:

  • 1 ½ pounds baby potatoes, halved or quartered

Seasoning:

  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning

Toppings:

  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Optional: red pepper flakes for heat

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C).
  2. Prepare Chicken and Potatoes: In a large bowl, combine chicken, potatoes, olive oil, garlic, salt, pepper, and Italian seasoning. Toss to coat.
  3. Bake: Spread mixture on a baking sheet. Sprinkle half of Parmesan cheese on top. Bake for 30–35 minutes, stirring halfway through.
  4. Final Touches: Sprinkle remaining Parmesan in the last 5 minutes. Garnish with parsley and red pepper flakes before serving.
