- 1 1/2 pounds baby gold or red potatoes
Seasoning:
- 2 tablespoons olive oil
- 2 tablespoons melted butter
- 3 cloves garlic, minced

- 1/2 teaspoon dried Italian seasoning
- 1/3 cup grated Parmesan cheese
Garnish:

Instructions
- Preheat oven: Preheat oven to 425°F.
- Cook Potatoes: Boil potatoes until fork-tender, drain, and dry.
- Smash Potatoes: Flatten potatoes on baking sheet.
- Season Potatoes: Mix oil, butter, garlic, salt, pepper, Italian seasoning, coat potatoes, top with Parmesan.
- Bake: Bake until golden and crispy.
- Garnish and Serve: Garnish with parsley, serve hot.
Notes
- For extra crispy potatoes, broil for the last 2–3 minutes of baking.
