For the Steak Bites:

  • 1 1/2 pounds sirloin or ribeye steak, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional)

For the Mashed Potatoes:

  • 2 pounds Yukon gold or russet potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup whole milk or cream
  • 1/4 cup sour cream (optional)
  • Salt and pepper to taste

Instructions

  1. Make the Mashed Potatoes: Place the peeled and cubed potatoes in a large pot of salted water. Boil until fork-tender, about 15–20 minutes. Drain and return to pot. Add butter, milk, and sour cream if using. Mash until smooth. Season with salt and pepper.
  2. Make the Steak Bites: Pat dry steak cubes, season with salt and pepper. Sear in olive oil in a skillet until browned. Set aside. Sauté garlic in butter, add steak back to the pan with Parmesan. Toss to coat.

Notes

  • For extra richness, stir more Parmesan into the mashed potatoes.
  • Use a meat thermometer to avoid overcooking the steak—130–135°F for medium-rare.
