Description

Potatoes:

  • 2 pounds baby potatoes (halved or quartered)

Seasoning:

  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried rosemary or thyme
  • 2 tablespoons chopped fresh parsley (optional)
  • Grated Parmesan cheese for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Toss Potatoes: In a large bowl, toss the potatoes with olive oil, minced garlic, salt, black pepper, and dried rosemary until evenly coated.
  3. Roast Potatoes: Spread the potatoes in a single layer on the prepared baking sheet, cut side down. Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy on the edges.
  4. Finish and Serve: Remove from the oven and sprinkle with fresh parsley and Parmesan cheese if desired. Serve hot.

  • Yukon Gold or red potatoes work well for this recipe.
