For the Chicken:
- 500 g boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 eggs, beaten
- 100 g cornstarch
- 50 g all-purpose flour
- 1/2 tsp salt
- vegetable oil, for frying
For the Sauce:
- 2 tbsp soy sauce
- 2 tbsp hoisin sauce
- 2 tbsp rice vinegar
- 2 tbsp sugar
- 1 tbsp sesame oil
- 1 tbsp cornstarch mixed with 2 tbsp water
Additional:
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 4–6 dried red chilies (optional)
- sliced spring onions and sesame seeds, for garnish
Instructions
- Prepare the Chicken: Whisk eggs in a bowl. In another bowl, combine cornstarch, flour, and salt. Dip chicken in egg, then coat in flour mixture.
- Fry the Chicken: Heat oil in a pan, fry chicken until golden and crispy. Drain on paper towels.
- Make the Sauce: Sauté garlic, ginger, and chilies. Whisk together soy sauce, hoisin sauce, vinegar, sugar, sesame oil, and cornstarch slurry. Simmer until thick.
- Combine: Toss fried chicken in the sauce until coated.
- Serve: Garnish with spring onions and sesame seeds.

- Best served with steamed rice and broccoli.
- You can use chicken breast instead of thighs.
