Ingredients

  • 2 tablespoons vegetable oil

  • 2 pounds beef chuck (cut into 1-inch cubes)

  • 2 large yellow onions (thinly sliced)

  • 2 garlic cloves (minced)

  • 2 tablespoons tomato paste

  • 1 tablespoon sweet paprika

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon caraway seeds (optional)

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 cups beef broth

  • 1 cup water

  • 1 tablespoon red wine vinegar

  • 1 bay leaf

  • Chopped fresh parsley for garnish


Instructions

  1. Heat the oil: In a Dutch oven, heat vegetable oil over medium-high heat.
  2. Brown the beef: Brown beef cubes in batches, then set aside.
  3. Sauté onions: Cook sliced onions until golden, then add garlic and spices.
  4. Add remaining ingredients: Return beef to pot, add broth, water, vinegar, and bay leaf.
  5. Simmer: Cover and simmer for 1.5-2 hours until beef is tender.
