To Serve:
- 4 large eggs
- 2 tablespoons chopped fresh parsley
Instructions
- Cook Bacon: In a large skillet over medium heat, cook chopped bacon until crispy. Remove and set aside.
- Cook Potatoes: Add olive oil to the skillet if needed. Cook diced potatoes until beginning to soften and brown, about 8-10 minutes.
- Add Vegetables: Add onions, bell peppers, zucchini, and season with spices. Cook until tender and golden brown, about 8-10 minutes.
- Add Eggs: Make wells in the hash and crack an egg into each. Cover and cook until egg whites are set but yolks are still runny, about 3-5 minutes.
- Finish: Sprinkle cooked bacon over the top, garnish with parsley, and serve hot.
