These Golden Crispy Cauliflower Bites are a delicious vegan appetizer or snack that’s baked to perfection. With a crispy coating and tender cauliflower inside, they are a crowd-pleaser for any occasion.

Batter:
- 1 medium head cauliflower (cut into bite-sized florets)
- 3/4 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup water (plus more if needed)
Coating:
- 1 cup panko breadcrumbs
- olive oil spray
Instructions
- Preheat Oven: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare Batter: In a medium bowl, whisk together flour, cornstarch, baking powder, garlic powder, paprika, salt, pepper, and water until smooth.
- Coat Cauliflower: Dip cauliflower florets into the batter, then coat with panko breadcrumbs.
- Bake: Arrange coated florets on the baking sheet, spray with olive oil, and bake for 25–30 minutes, flipping halfway through.
- Serve: Serve hot with your favorite dipping sauce.
Notes
- For a spicier version, add cayenne pepper to the batter or serve with buffalo sauce.
- These bites can also be air fried at 400°F for 12–15 minutes.
