For the brownie base:

  • 1 box (18–19 oz) fudge brownie mix (plus ingredients on box) or your favorite homemade brownie recipe

For the mint cream layer:

  • 4 oz cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tablespoon milk or cream
  • 1/2 teaspoon peppermint extract
  • Green food coloring (a few drops)

For the chocolate ganache topping:

  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 1 tablespoon butter

Instructions

  1. Prepare the brownie base: Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or foil, leaving an overhang for easy removal. Prepare the brownie batter according to the package instructions or your homemade recipe. Spread the batter evenly into the pan and bake as directed. Allow brownies to cool completely before proceeding.
  2. Make the mint cream layer: In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add powdered sugar, milk or cream, peppermint extract, and a few drops of green food coloring. Continue beating until the mixture is light and fluffy. Spread this mint layer evenly over the cooled brownie base. Place in the refrigerator and chill for 30 minutes to set.
  3. Prepare the chocolate ganache topping: In a small saucepan, heat the heavy cream and butter just until it begins to simmer. Pour the hot cream mixture over the semi-sweet chocolate chips in a bowl. Let it sit undisturbed for 1 to 2 minutes to melt the chocolate. Stir gently until the ganache is smooth and glossy. Allow it to cool slightly, then gently pour over the chilled mint layer, spreading evenly. Return the bars to the refrigerator and chill for about 1 hour until the ganache is set.
  4. Serve: Once the ganache is firm, use the parchment or foil overhang to lift the entire dessert from the pan. Cut into 24 bars. Serve chilled or at room temperature for best flavor and texture.
