For the Marinated Chicken:

  • 1 1/2 pounds boneless, skinless chicken breasts (cut into strips)
  • 3 tablespoons olive oil (divided)
  • juice of 1 lemon
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Bowls:

  • 1 cup uncooked rice or quinoa
  • 2 cups water or chicken broth
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1/4 red onion (thinly sliced)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives (sliced)
  • 1/4 cup chopped fresh parsley
  • 1/2 cup tzatziki sauce (for serving)

Instructions

  1. Marinate the Chicken: In a bowl, combine 2 tablespoons olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken and toss to coat. Marinate for at least 30 minutes, or up to 4 hours.
  2. Cook the Rice or Quinoa: Meanwhile, cook the rice or quinoa with water or chicken broth according to package instructions.
  3. Cook the Chicken: In a large skillet, heat the remaining 1 tablespoon olive oil over medium-high heat. Add the marinated chicken and cook for 6–8 minutes, turning as needed, until fully cooked and golden brown.
  4. Assemble the Bowls: Divide the cooked rice or quinoa between 4 bowls. Top each with cooked chicken, cherry tomatoes, cucumber, red onion, feta cheese, olives, and parsley. Drizzle with tzatziki sauce and serve immediately.
