- 1½ pounds boneless, skinless chicken breasts
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Bowl:
- 2 cups cooked rice or quinoa
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ cup Kalamata olives, pitted and halved
- ½ cup crumbled feta cheese
- ¼ cup red onion, thinly sliced
- ½ cup hummus or tzatziki sauce

Instructions
- Marinate the Chicken: In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Pour over chicken, marinate for at least 30 minutes.
- Grill the Chicken: Cook marinated chicken on a grill pan or skillet over medium-high heat until internal temperature reaches 165°F. Slice and set aside.
- Assemble the Bowls: Divide rice or quinoa among four bowls. Top with sliced chicken, cucumber, tomatoes, olives, feta, and red onion. Add hummus or tzatziki, garnish with parsley.
