Marinade:
- 1/4 cup olive oil
- 3 tablespoons fresh lemon juice (about 1 lemon)
- 3 cloves garlic (minced)
- 1 tablespoon red wine vinegar
- 1 tablespoon chopped fresh oregano (or 1 teaspoon dried)
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/2 teaspoon Dijon mustard for extra tang
Instructions
- In a small bowl or jar, whisk together olive oil, lemon juice, garlic, red wine vinegar, oregano, thyme, salt, pepper, and Dijon mustard if using.
- Place chicken (breasts, thighs, or drumsticks) in a zip-top bag or shallow dish. Pour the marinade over the chicken, seal or cover, and refrigerate for at least 30 minutes or up to 8 hours.
- Remove chicken from marinade and cook on the grill, stovetop, or in the oven until the internal temperature reaches 165°F.
Notes
- This marinade works for up to 2 pounds of chicken.
- Reserve a few tablespoons before marinating if you’d like to drizzle it over the cooked chicken as a sauce.
