For the Casserole:

- 1 small yellow onion, diced
- 2 cloves garlic, minced

- 1 cup milk
- 1/2 cup sour cream
- 1 (10.5-ounce) can cream of mushroom soup
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon thyme (optional)
- 3 cups cooked or canned green beans, drained
- 1 1/2 cups shredded cheddar cheese, divided
- 1 (28-ounce) bag frozen tater tots
Instructions
- Preheat oven and prepare baking dish: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
- Sauté onion and garlic: In a skillet, melt butter, add diced onion, and cook until softened. Add garlic and cook briefly.
- Make the sauce: Stir in flour, then whisk in milk until smooth. Add sour cream, cream of mushroom soup, salt, pepper, and thyme. Simmer until slightly thickened.
- Combine ingredients: Remove from heat, add green beans and 1 cup of cheese. Pour mixture into baking dish.
- Add tater tots and bake: Arrange tater tots on top, bake uncovered for 35–40 minutes until golden. Sprinkle remaining cheese and bake an additional 5 minutes.
- Serve: Let rest for 5 minutes before serving.
