Chicken Stew:
- 1 1/2 pounds boneless, skinless chicken thighs (cut into bite-sized pieces)
- 1 tablespoon olive oil
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 can (4 ounces) diced green chiles
- 2 cups diced potatoes
- 4 cups low-sodium chicken broth
- 1 cup frozen or fresh corn kernels
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro

Instructions
- Heat Olive Oil: In a large pot or Dutch oven, heat olive oil over medium-high heat.
- Cook Onion and Garlic: Add diced onion and cook until softened. Stir in minced garlic and cook until fragrant.
- Cook Chicken: Add chicken pieces and cook until browned.
- Add Remaining Ingredients: Stir in green chiles, potatoes, broth, corn, cumin, oregano, salt, and pepper. Simmer until potatoes are tender and chicken is cooked through.
- Finish and Serve: Stir in cilantro. Ladle into bowls and serve with lime wedges.
Notes
- For extra flavor, use roasted Hatch green chiles if available.
