Chicken Stew:

  • 1 1/2 pounds boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 1 tablespoon olive oil
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 can (4 ounces) diced green chiles
  • 2 cups diced potatoes
  • 4 cups low-sodium chicken broth
  • 1 cup frozen or fresh corn kernels
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Heat Olive Oil: In a large pot or Dutch oven, heat olive oil over medium-high heat.
  2. Cook Onion and Garlic: Add diced onion and cook until softened. Stir in minced garlic and cook until fragrant.
  3. Cook Chicken: Add chicken pieces and cook until browned.
