Description

For the Green Pea Soup:

  • 2 tablespoons unsalted butter or olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 4 cups fresh or frozen green peas
  • 1 medium potato, peeled and diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh mint leaves or parsley (optional)

For Garnish:

  • 1/2 cup heavy cream or plain yogurt

Instructions

  1. In a large pot over medium heat, melt the butter or heat the olive oil.
  2. Add the chopped onion and cook for about 5 minutes, until soft and translucent.

  3. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the diced potato and broth. Bring to a boil, then reduce heat and simmer for about 10 minutes, or until the potato is tender.
  5. Add the green peas and cook for 5 minutes more until heated through but still bright green.
  6. Remove from heat and stir in the fresh mint or parsley if using.
  7. Using an immersion blender or working in batches with a regular blender, puree the soup until smooth.
  8. Season with salt and pepper to taste. Return to the pot and reheat gently if needed.
  9. Serve hot, garnished with a swirl of cream or a dollop of yogurt if desired.

Notes

  • For a lighter version, omit the cream or yogurt.
  • Serve with crusty bread or a grilled cheese sandwich for a hearty meal.
