Pizza Dough:

  • 1 pound pizza dough, homemade or store-bought

Toppings:

  • 1 tablespoon olive oil
  • 1 cup cooked chicken breast, shredded
  • ½ cup barbecue sauce, divided
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded smoked gouda or cheddar cheese
  • ¼ cup thinly sliced red onion
  • ¼ cup sliced jalapeños (optional)
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Preheat the Grill: Preheat the grill to medium-high heat (about 400°F) and lightly oil the grates.
  2. Prepare the Dough: Roll or stretch the pizza dough into a 12-inch round on a floured surface. Brush one side lightly with olive oil and grill for 2–3 minutes.
  3. Add Toppings: Spread barbecue sauce on one side of the dough. Top with chicken, cheeses, red onion, and jalapeños. Close the grill lid and cook for 4–6 minutes.
