For the Grilled Chicken:

  • 1 1/2 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

For the Bowls:

  • 4 cups fresh broccoli florets
  • 2 cups cooked brown rice or quinoa

For the Creamy Garlic Sauce:

  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the Grill: Preheat your grill or grill pan to medium-high heat.
  2. Season the Chicken: In a small bowl, combine 2 tablespoons olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Rub the seasoning all over the chicken breasts.
